This gives you complete control over the ingredients.
Baking powder may be used as a substitute for baking soda. The extra ingredients in the baking powder will have an effect on the taste of whatever you are making but this isn t necessarily bad. You can switch baking powder for baking soda but expect the flavor to change a little. To substitute baking powder for baking soda simply use three times the amount of baking powder as you would baking soda.
Ideally triple the amount of baking soda to equal the amount of baking powder. You might wish to make and use homemade baking powder even if you can purchase commercial baking powder. So if a recipe calls for a teaspoon of baking soda use three teaspoons of baking powder instead. This counteracts the addition of the dry acid and creates the right chemical reaction in your batter or dough.
